Mike & Mo - Walnut Bars with Sunflower Seeds - iPhone Pictures

I found this recipe randomly in a Thermador calendar in with a whole pile of "you're a new homeowner!" mail. It originally called for black walnuts, but wasn't able to find any. It was also difficult to find sunflower seeds that were roasted but not salted, so I bought raw, shelled, unsalted sunflower seeds, tossed them with a drizzle of canola oil, and baked them on foil at 300°F until browned.


Crust
Butter for pan
1 1/2 c all-purpose flour
1/2 c finely chopped walnuts
1/3 c firmly-packed golden brown sugar
1/2 t salt
3/4 c (1 1/2 sticks) chilled unsalted butter, cut into small pieces

Preheat oven to 350°F. Lightly butter 13x9" baking pan. Combine flour, walnuts, sugar, and salt in a large bowl. Using pastry blender or two knives, cut in butter until mixture is crumbly. Press mixture onto bottom of prepared pan. Bake until crust is golden brown, about 20 minutes.

Filling
4 large eggs
1 c firmly-packed golden brown sugar
1 c dark corn syrup
1/4 c (1/2 stick) melted butter
1 t vanilla extract
1/4 t salt 1 c coarsely chopped walnuts
1/2 c roasted unsalted shelled sunflower seeds

Whisk eggs, brown sugar, corn syrup, melted butter, vanilla, and salt in large bowl until smooth. Gently stir in walnuts and sunflower seeds. Pour mixture over hot crust. Bake until filling is set, about 35 minutes.

Cool in pan on rack. Cut into bars.
